Low milk prices are forcing dairy farmers to increase the value of their primary product for financial survival. This may be done by using the right dairy breed. For many years, the fat in milk has been the proverbial black sheep of the industry. The general recommendation is that people should eat less fat for protection against cardiovascular diseases. This has resulted in the popularity of low-fat milk, cheese and yogurt products.
